A family history of heritage and determination

Since 1989, the success of Refuge des Gourmets has been built on the hard work and dedication of Florence and Jean-Marie Chanove. The secret behind their venture spanning three decades lies in their strength and conviction, which they have undoubtedly passed on to their son Hubert. It is now Hubert’s turn to play his part in the family business alongside Fanny and a young, motivated team. They are all looking forward to working with the young chef to ensure that the Michelin star they won in 2016 continues to burn bright for the delight of food lovers today and tomorrow.

The restaurant.

Two rooms, two worlds

You will be met by our team on arrival and shown to one of the rooms in our restaurant: one has a timeless vintage feel that creates a warm and cozy atmosphere. Soft lighting and well-spaced, elegant tables offer a comfortable and intimate setting.

The other, smaller room has a round table for 10 or more people, ideal for family get-togethers or celebrations with friends. Air-conditioned and soundproof, it can be adapted to suit any occasion in complete relaxation!

Shady terrace and raspberry tasting

Thanks to fans of this fruit, raspberries are having a revival and becoming increasingly tasty and popular!

The Lionnet Farm and the Refuge des Gourmets have joined forces to restore this delicious red berry and longstanding symbol of Machilly to its former glory.

From the field to your plate, raspberries feature in a variety of forms on our dedicated menu. Throughout the summer season, we invite you to come and savour them on our shady terrace or on a cool summer evening.

Would you like to see the chefs in action as they prepare dishes and experience a unique and convivial moment in a special place? Now you can.
Sitting comfortably at our chef’s table, you will witness the subtle interaction between the kitchen and service area: you will watch, taste and discuss the menu composed and designed especially for you in a friendly atmosphere.

We recommend booking a table for 4 to 6 people in advance if you'd like to share this experience.

Proud of using local products and dedicated to inventive cuisine

Hubert Chanove is one of a new generation of chefs who grew up with the surrounding nature. He is a champion of his local region Bas-Chablais and values his relationships with local producers as well as short supply chains. He also likes to surprise guests with the beauty of a plant, the delicate flavor of a wild flower and nature's many riches that surround him, ripe for the picking.

The chef and his team then assemble, compose and taste all these herbs and plants that will give their dishes an original touch.

Inspired by wild plants, this creative cuisine is an ode to local produce that grows between the lake and the mountains…

Hubert the Chef.

His career

Born in Thonon-les-Bains, Hubert grew up in Machilly and blossomed in the family atmosphere at the Refuge des Gourmets. He developed a passion for cooking at an early age. He studied at local cookery schools and later completed his training with major Michelin-starred chefs all over France.

After six years, he decided to return to his village in March 2014. Father and son developed their cooking in harmony and won their first Michelin star two years later: a mark of recognition for the entire team.

In 2017, there was a new addition to the family with the arrival of restaurant manager Fanny, who became the young chef’s partner and mother to their beautiful little girl.

Our talented and attentive wait staff will be honored to devote their expertise to you during your visit, for an exceptional experience that lives up to the spirit of the place.

Once you are comfortably seated, the wait staff will be delighted to guide you through the dishes and their distinctive flavours. They take it upon themselves to ensure every mouthful concocted by our chefs gives you joy and gustatory pleasure. The perfect combination!

Come and gather wild plants for a morning and discover their secrets with the chef Hubert Chanove.

Do you want to find out more about the chef’s plant-inspired cuisine? Would you like to know where the wild flowers and herbs on your plate come from? Or forage for herbs in the wild along the Foron river or in the forest? Hubert will be thrilled to answer your questions and share his knowledge with you during the walk.

Foraging trips take place from time to time on Saturday mornings depending on the season and the weather. Booking is essential. You can come on your own or with friends. This magical experience ends with a magnificent lunch based on wild plants and herbs. You will get a compendium of local flora and recipes as a wonderful souvenir…
